Chicken breast, especially on sale, can be a lean protein bargain - wrap or bag individually and throw them in the freezer, and they’ll keep for weeks, even though they were probably on sale because they have an overstock and were near to be “too old to sell.”
You just need to remember to pop a few in to the fridge to defrost the day or two before, depending on your fridge. (Defrosting overnight on the counter is not a great idea - bacteria can be growing by morning. Meanwhile, if you defrost in your fridge, you save some of the energy that was spent to freeze the chicken by using it to cool the fridge.)
Years back, when I was doing PSMF without protein powders, I had a steady rotation of chicken in the fridge - morning, move chicken from freezer to fridge for tomorrow; evening, take yesterday’s chicken from fridge to cook.
