Molecularly reconstructed wine?

What do you guys think of this startup making wine in a lab, without grapes? It’s vegan, gluten-free, sulfite-free, histamine-free, and can be made with 50-100x less water than traditional wine.

Well to start with, all wine is vegan and gluten-free and probably those other ones too.

That said, engineered food can’t be bad.

Actually not all wines are vegan - most people (even some vegans) don’t know that wine is often filtered through fining agents that are animal-derived (some examples are: bone marrow, casein, gelatin).

Also, almost all traditional wines have histamine. Most people can metabolize the histamine in wine, but some people are intolerant/sensitive to it. These people will usually experience headaches or flushing from drinking wine.
