I will be receiving my first shipment in August (very excited!), but I was wondering if anyone had tried using sunflower lecithin instead of soy lecithin. I’d rather not have any soy byproducts at all and was curious if anyone had any insights as to the possible effects of such a change.
Well, you’d be hard pressed to find soy lecithin that was non-gmo. Not that it makes much difference though since it’s highly processed to begin with. Still, switching to sunflower lecithin will be better for Ashkenazi Jews, and you get more choline, but I think you might have less fatty acids.
